Warm Spring Salad Recipe

This flavorful and crunchy salad is vegan, gluten-free, nut-free, and soy-free.

Ingredients:

  • Uncooked quinoa – 1 cup
  • Extra virgin olive oil – ½ tbsp
  • Leek – 1, sliced into round pieces
  • Asparagus – 1 bunch, edges chopped into small pieces
  • Strawberries – 1 cup, diced
  • Garlic cloves – 2, minced
  • Peas - 3/4 cup
  • Fresh parsley – 1 cup, freshly chopped
  • Sea salt and pepper to taste
  • Water or vegetable broth – 1.5 cups

For dressing:

  • Extra virgin olive oil – 2-3 tbsp
  • Lemon juice – 3 tbsp
  • Maple syrup – ½ tbsp
  • Lemon zest – Optional

Method:

  • Rinse quinoa thoroughly, strain, and place it into a medium-sized pan. Add water or vegetable broth and bring to a boil.
  • Reduce the flame and cover the pan to let the quinoa cool for about 15-minutes or until the water is absorbed.
  • Turn off the gas and leave the pan covered for 5 minutes.
  • Take some olive oil in a large wok and sauté the leek and garlic over medium heat. After about 5 minutes, season with salt and pepper.
  • Add the asparagus and wait about 10 minutes until it's tender.
  • Add the peas, parsley, and strawberries to the wok, mix lightly and heat for a few minutes before removing from heat.
  • In a separate bowl, mix all the dressing ingredients and add some sea salt for taste. You can use a sweetener of your choice if you don't have maple syrup.
  • Stir in the dressing into the wok, followed by quinoa.
  • Transfer to a plate and garnish with lemon zest and nuts before serving.
