2 1/2 pounds sweet potatoes
1/2 cup firmly packed brown sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 large egg
2 tablespoons butter, softened
1/2 cup 2% reduced-fat milk
Vegetable cooking spray
1 tablespoon brown sugar
1 tablespoon melted butter
1 1/4 cups miniature marshmallows
1 1/4 cups cereal, crushed
1/4 cup chopped pecans
Start by cooking the sweet potatoes in the oven at 400 degrees for about an hour. Once the potatoes have cooked until tender, let the potatoes cool. Then remove the skins and mash.
Continue to mash the sweet potatoes so that they’re light and fluffy. Add in the butter along with the sugar, egg, milk, salt, and vanilla extract. Mix the ingredients until they’re thoroughly blended. Transfer the filling into a casserole dish coated with the vegetable cooking spray.
Next, make the topping. Combine the cereal (like corn flakes or rice crispies) with the sugar, nuts, and butter. Sprinkle the mixture over the sweet potato and bake at 350 for thirty minutes. Remove from the oven and add marshmallows. Continue to bake for another ten minutes. Serve and enjoy with your Thanksgiving meal.
