2 cups uncooked penne pasta 4 tablespoons extra-virgin olive oil, divided 12 cherry tomatoes 12 asparagus spears 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper 1 1/2 teaspoons honey 1 tablespoon Dijon mustard 2 tablespoons fresh lemon juice 1 teaspoon dried Italian herbs 1 tablespoon minced shallots 1/2 cup pitted Kalamata olives, halved 2 cups baby arugula 1/2 cup crumbled goat cheese Start by making the pasta and set the noodles aside. Coat the tomatoes and the asparagus in a tablespoon of olive oil mixed with salt and pepper. On a baking sheet, roast the vegetables at 400 degrees. Remove the asparagus after about 5 minutes and keep the tomatoes in for an additional five minutes or until well roasted. Chop the asparagus and tomatoes into smaller pieces. In a separate bowl, combine the honey with the mustard, lemon juice, Italian herbs, and shallots. Then add another three tablespoons of olive oil and the remaining salt and pepper. Mix the pasta with the vegetables, olives, and arugula. Then drizzle the honey mixture over the pasta, mix, and sprinkle goat cheese over the dish.
